Textures were around way before Photoshop was invented. They would be made in the darkroom by scratching a negative with needles or roughening it up with sandpaper. The photographic paper could be stained with fixer before exposing or multiple negatives on top of one another in the enlarger.
All these methods were used to create an image with some form of texture that could be overlaid on top of your image to create mood and atmosphere.
In todays digital darkroom we can create textures digitally to overlay our photographs.
